03 - Spread tortilla chips evenly on a large ovenproof platter or baking sheet.
04 - Distribute black beans evenly over the chips, then sprinkle with shredded cheddar and Monterey Jack cheeses. Add cooked ground beef if using.
05 - Scatter sliced jalapeños and half of the chopped red onion over the assembled layers.
06 - Place the platter in the oven and bake for 8 to 10 minutes until the cheese is fully melted and bubbly.
07 - Remove from oven and top with diced cherry tomatoes, remaining red onion, diced avocado if desired, and chopped coriander. Serve immediately with sour cream and salsa on the side.

# Expert Advice:

01 -
  • It comes together in under 30 minutes, even if you're cooking the beef from scratch.
  • Everyone eats with their hands and somehow feels like a celebration, whether it's Tuesday or a real party.
  • You can customize it based on what's actually in your fridge, so nothing ever feels wasteful.
02 -
  • Don't add the avocado or fresh toppings before baking—they'll turn sad and brown, and you'll regret it immediately.
  • Cheese absolutely needs to be shredded, not sliced, so it melts evenly instead of creating weird clumpy patches.
03 -
  • Pat your canned beans dry before adding them; excess liquid is the enemy of crispy chips.
  • Use an ovenproof platter or baking sheet so you can serve straight from the oven and keep everything warm the whole time people are eating.
